Herb-Roasted Chicken and Potatoes

Add a zesty lemon touch for a refreshing flavor twist.
Ingredients:

4 chicken thighs
1 lb baby potatoes
Juice and zest of 1 lemon
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
Salt and pepper

Preparation:

Preheat oven to 400°F (200°C).
Toss potatoes with olive oil, lemon juice, zest, garlic powder, oregano, salt, and pepper.
Coat chicken with the same mix and place in a baking dish.
Bake for 40-45 minutes, garnishing with extra lemon zest before serving.

Tip: Serve with a side of steamed veggies for a complete meal.
