Herb and Maple Roasted Cauliflower and Chickpeas
This dish embodies the warmth of fall flavors, making it an ideal Thanksgiving side. The crispy roasted cauliflower is paired with protein-packed chickpeas, a hint of maple sweetness, and aromatic herbs like rosemary and thyme. 1 head of cauliflower, cut into florets
1 can chickpeas, drained and dried
3 tbsp olive oil
2 tbsp maple syrup
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tsp salt
½ tsp pepper
5 ribs of celery, cut into moons
4 slices bacon, cut into pieces
½ cup dried cranberries
Directions:
1. Preheat oven to 425°F.
2. Toss cauliflower, chickpeas, olive oil, maple syrup, rosemary, thyme, salt, and pepper in a bowl.
3. Spread on baking sheet and bake for 25 mins.
4. Add celery and bacon, bake for 20-25 mins.
5. Remove, add cranberries, and toss. Serve warm.
