Heavenly Stuffed Peanut Butter Delights
Ingredients:
1 cup creamy peanut butter
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup peanut butter, chilled in small teaspoon-sized dollops
Instructions:
Preheat oven to 350°F (175°C).
In a large mixing bowl, cream together 1 cup peanut butter, butter, granulated sugar, and brown sugar until smooth.
Beat in the egg and vanilla extract.
In another bowl, whisk together flour, baking soda, and salt; gradually add to the creamed mixture and mix well.
Take a small portion of cookie dough, flatten it slightly, place a dollop of chilled peanut butter in the center, and fold the dough around it, forming a ball.
Place cookies 2 inches apart on ungreased baking sheets.
Bake for 10-12 minutes or until edges are lightly browned.
Let cool on pans for 5 minutes before removing to wire racks to cool completely.
