Hearty White Bean & Spinach Soup
Ingredients
2 tbsp olive oil
1 medium onion, chopped
2 carrots, diced
2 celery stalks, chopped
3 garlic cloves, minced
4 cups vegetable broth (or chicken broth)
2 cans (15 oz each) white beans, rinsed and drained
1 tsp smoked paprika
1/2 tsp dried thyme
2 cups fresh spinach, roughly chopped
Salt and pepper, to taste
Fresh parsley and chili flakes, for garnish
Directions
Sauté the Veggies:
In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
Add Garlic & Spices:
Stir in minced garlic, smoked paprika, and thyme. Cook for 1 minute until fragrant.
Add Broth & Beans:
Pour in the broth and add the white beans. Bring to a boil, then reduce heat and let it simmer for 15 minutes.
Stir in Spinach:
Add the chopped spinach and let it wilt for 2-3 minutes. Season with salt and pepper.
Garnish & Serve:
Ladle into bowls and garnish with fresh parsley and chili flakes for a kick.
