Hearty Tuscan White Bean Soup
This cozy and comforting soup is a classic winter favorite! Originating in Tuscany, it’s full of flavors from herbs, garlic, and hearty white beans. It’s not just tasty but also incredibly healthy – gluten-free, vegan, and rich in protein. Serve it with some crusty bread, and it’s the perfect meal for a chilly day!
¼ cup olive oil
1 small onion, diced
2 medium shallots, chopped
4 cloves garlic, mashed
2 carrots, chopped into coins
2 celery stalks, diced
3 (15 oz) cans cannellini beans, drained and rinsed
2 bay leaves
1 tbsp Italian seasoning
½ tsp red pepper flakes
5-6 cups vegetable broth
½ tsp sea salt
¼ tsp ground black pepper
3 cups fresh spinach
Directions:
1. Heat oil in a large pot. Sauté onions, garlic, and shallots.
2. Add carrots and celery, sauté for 7-10 mins.
3. Add beans, broth, and spices. Bring to a boil, then simmer.
4. Blend 2 cups for creaminess. Stir in spinach.
