Hearty Taco Soup

Ingredients

1 lb ground beef (or turkey)
1 small onion, diced
3 cloves garlic, minced
1 (15 oz) can diced tomatoes
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can pinto beans, drained and rinsed
1 cup frozen corn
2 cups beef or chicken broth
1 (4 oz) can diced green chilies
1 packet taco seasoning
Optional toppings: shredded cheddar cheese, sour cream, diced avocado, chopped green onions
Directions

Cook the Beef:

In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
Sauté Onion & Garlic:

Add diced onion and garlic to the beef and sauté until softened, about 2–3 minutes.
Add the Remaining Ingredients:

Stir in the diced tomatoes, black beans, pinto beans, corn, green chilies, broth, and taco seasoning. Mix well.
Simmer the Soup:

Bring the soup to a boil, then reduce heat to low and let it simmer for 20 minutes, allowing the flavors to combine.
Serve with Toppings:

Ladle the soup into bowls and top with shredded cheese, sour cream, diced avocado, and green onions. Serve with tortilla chips for dipping!
