Hearty Chicken Bean Soup

Ingredients:

2 cups cooked chicken breast, shredded

1 can (15 oz) white beans, drained and rinsed

1 can (15 oz) pinto beans, drained and rinsed

1 can (15 oz) sweet corn, drained

1 can (15 oz) diced tomatoes with green chilies

4 cups chicken broth

1 small onion, diced

2 garlic cloves, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh cilantro, for garnish

Instructions:

1. Sauté Aromatics:

In a large pot, heat olive oil over medium heat.

Add diced onion and garlic, and sauté until soft and fragrant (about 3 minutes).

2. Add Ingredients:

Stir in cumin, chili powder, and smoked paprika. Cook for 1 minute to toast the spices.

Add chicken broth, shredded chicken, beans, corn, and diced tomatoes with chilies. Stir to combine.

3. Simmer:

Bring the soup to a boil, then reduce the heat to low.

Cover and simmer for 20-25 minutes to let the flavors meld together.

4. Season:

Taste the soup and adjust salt and pepper as needed.

5. Serve:

Ladle the soup into bowls and garnish with fresh cilantro.

Serve warm with crusty bread or tortilla chips.

Tips:

For extra flavor, add a squeeze of lime juice before serving.

Customize with toppings like shredded cheese, sour cream, or avocado slices.
