Hearty Beef Stew
Ingredients:
500g beef stew meat (cut into chunks)
2 tbsp all-purpose flour
2 tbsp olive oil
1 onion (chopped)
2 garlic cloves (minced)
3 cups beef broth
2 carrots (sliced)
3 medium potatoes (cubed)
1 cup green beans (trimmed)
1 tsp dried thyme
1 bay leaf
Salt and black pepper to taste
Fresh parsley (chopped, for garnish)
Instructions:
1. Toss the beef chunks in flour, salt, and pepper. Heat olive oil in a pot and brown the beef on all sides. Remove and set aside.
2. In the same pot, sauté onion and garlic until softened. Add the beef back, along with beef broth, thyme, and the bay leaf. Bring to a boil, then reduce heat and simmer for 1 hour.
3. Add carrots and potatoes to the pot and cook for another 30 minutes, or until tender.
4. Stir in green beans and cook for an additional 10 minutes. Adjust seasoning if needed.
5. Garnish with fresh parsley and serve warm. Perfect with crusty bread!
