Hearty Beef Stew

Ingredients

2 lbs beef stew meat, cubed
2 tbsp olive oil
1 large onion, diced
3 garlic cloves, minced
4 cups beef broth
1 cup red wine (optional)
3 large carrots, sliced
3 medium potatoes, diced
2 celery stalks, chopped
1 cup frozen peas
3 tbsp tomato paste
2 tsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
2 tbsp all-purpose flour
Salt and pepper to taste
Directions

Brown the Beef: Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then sear in batches until browned. Set aside.
Sauté Vegetables: In the same pot, sauté onion and garlic until fragrant.
Build the Base: Stir in tomato paste and flour, cooking for 1 minute. Gradually add beef broth and wine, scraping up browned bits.
Simmer: Return beef to the pot. Add carrots, potatoes, celery, Worcestershire sauce, thyme, and rosemary. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5-2 hours, stirring occasionally.
Add Peas: Stir in peas during the last 10 minutes of cooking. Adjust seasoning with salt and pepper.
Serve: Garnish with fresh parsley (optional) and serve hot with crusty bread!
