Hearty Beef and Barley Soup
Ingredients
1 lb beef stew meat, cut into 1-inch cubes
1 tbsp olive oil
1 onion, diced
3 garlic cloves, minced
3 carrots, sliced
2 celery stalks, sliced
6 cups beef broth
1 cup pearl barley
1 tsp dried thyme
1 tsp dried parsley
Salt & pepper, to taste
1 bay leaf
Directions
Sear the Beef
Heat olive oil in a large pot over medium-high heat. Add beef cubes and sear until browned on all sides. Remove and set aside.
Sauté Vegetables
In the same pot, add diced onion, carrots, celery, and garlic. Cook for 4-5 minutes until softened.
Simmer the Soup
Return the beef to the pot and add beef broth, barley, thyme, parsley, bay leaf, salt, and pepper. Stir well.
Cook Until Tender
Bring the soup to a boil, then reduce the heat to low and cover. Simmer for 1 ½ – 2 hours, stirring occasionally, until the beef is tender and the barley is fully cooked.
Serve & Enjoy
Remove the bay leaf and ladle the soup into bowls. Serve warm with crusty bread for a comforting meal.
