Harvest Tortellini Skillet with Roasted Veggies

Ingredients

1 lb (450g) tortellini (cheese or your favorite filling)
1 cup Brussels sprouts, halved
1 cup butternut squash, diced
1 cup sweet potatoes, diced
1 lb (450g) chicken sausage, sliced
2 tbsp olive oil
2 tsp Italian seasoning
1/2 tsp garlic powder
Salt and pepper, to taste
Fresh thyme, for garnish
Directions

Roast the veggies: Preheat oven to 400°F (200°C). On a baking sheet, toss Brussels sprouts, butternut squash, and sweet potatoes with olive oil, Italian seasoning, garlic powder, salt, and pepper. Roast for 20-25 minutes until tender and golden.

Cook the sausage: In a large skillet over medium heat, cook sliced chicken sausage until browned and heated through. Set aside.

Prepare the tortellini: Cook tortellini according to package instructions. Drain and set aside.

Combine everything: In the skillet, toss together the roasted veggies, cooked sausage, and tortellini. Heat for 2-3 minutes to combine flavors.

Serve: Garnish with fresh thyme and enjoy this cozy, one-skillet meal!
