Ham and Cheese Croquette Balls
Ingredients:
For the Filling:

2 cups mashed potatoes (cooled)

1/2 cup diced ham

1/2 cup shredded mozzarella cheese

1/4 teaspoon black pepper

Salt to taste

For Coating:

1 cup all-purpose flour

2 large eggs, beaten

1 1/2 cups breadcrumbs

For Frying:

Vegetable oil

For Garnish:

Fresh parsley, chopped

Instructions:

1. Prepare the Filling: In a mixing bowl, combine the mashed potatoes, diced ham, shredded mozzarella, black pepper, and salt. Mix until evenly combined. Shape the mixture into small balls and place them on a tray. Refrigerate for 30 minutes to firm up.

2. Coat the Croquettes: Roll each potato ball in flour, dip in the beaten eggs, and coat with breadcrumbs. Ensure all sides are evenly coated.

3. Fry the Croquettes: Heat vegetable oil in a deep skillet to 350°F (175°C). Fry the croquettes in batches until golden brown, about 2-3 minutes per batch. Remove and drain on a paper towel-lined plate.

4. Garnish and Serve: Sprinkle the croquettes with freshly chopped parsley and serve warm.
