2 medium sweet potatoes, cut into rounds
1 red pepper, sliced
150g mushrooms, sliced
1 red onion, cut into wedges
2 Tbsp olive oil
1 Tbsp balsamic glaze
150g cherry tomatoes
250g cooked rice
3 Tbsp pesto
225g halloumi cheese, sliced
Directions:
1. Roast sweet potatoes, then add veggies and balsamic.
2. Mix pesto with rice and add to tray with grilled halloumi.
