Halloumi Stuffed Peppers

Halloumi Stuffed Peppers make for a colorful, satisfying dish with a rich blend of flavors! This vegetarian-friendly recipe is perfect for midweek dinners when you want something hearty but meat-free. The combo of roasted peppers, halloumi cheese, and veggies, all tied together with a savory tomato sauce, creates a delicious and filling meal.

2 tbsp Cooking Oil
4 Large Bell Peppers, halved
225g Halloumi Cheese, chopped
200g White Rice, cooked
1 Red Onion, finely diced
3 Cloves Garlic, crushed
1 Courgette, diced
100g Mushrooms, diced
1 tbsp Dried Mixed Herbs
Pinch of Salt & Pepper
400g Chopped Tomatoes
3 tbsp Parmesan Cheese, grated

Directions:
1. Preheat oven to 180°C. Roast peppers for 5-10 min.
2. Cook onion and garlic until soft. Add veggies, halloumi, and seasoning. Stir in chopped tomatoes and simmer.
3. Mix in rice, stuff peppers, sprinkle with parmesan, and bake for 20 min.
