Halloumi Stuffed Peppers

2 tbsp Cooking Oil
4 Large Bell Peppers (cut in half, seeds removed)
225g Halloumi Cheese (chopped)
200g White Rice (cooked)
1 Red Onion (finely diced)
3 Cloves Garlic (crushed)
1 Courgette (diced)
100g Mushrooms (diced)
1 tbsp Dried Mixed Herbs
Pinch Salt and Pepper
400g Tin Chopped Tomatoes
3 tbsp Parmesan Cheese (grated)
Directions:
1. Preheat oven to 180°C.
2. Drizzle peppers with oil, bake for 10 mins.
3. Sauté garlic, onion, courgette, mushrooms, and halloumi in oil.
4. Add tomatoes, herbs, salt, and pepper. Simmer for 15 mins.
5. Stir in rice, fill peppers, and top with Parmesan.
6. Bake for 20 mins.
