1 Tbsp Oil
1/2 Yellow Onion, diced
2 Garlic Cloves, thinly diced
200g Diced Tomatoes/Can Tomato
1/2 tsp Salt
1/2 tsp Ground Cumin
1/2 tsp Paprika
1/2 tsp Turmeric
1/4 tsp Black Pepper
4 Halloumi Slices
1 Large Egg
Directions:
1. Preheat oven to 200°C. Heat oil in an oven-proof skillet, add onion, and cook until soft.
2. Add garlic, cook until golden, then stir in spices. Add tomatoes and simmer until thickened.
3. Grill halloumi, add to skillet.
4. Crack egg over tomatoes, bake until set (5 mins). Serve with grilled bread.
