Halloumi Curry
Halloumi Curry is a delightful twist on traditional curry, bringing in the unique, squeaky texture of halloumi cheese. This vegetarian dish combines creamy coconut milk, rich curry paste, and hearty chickpeas, making it perfect for a satisfying weeknight meal. 500 g Halloumi, cut into 1-2 cm cubes
2 tbsp Cornflour
2 tbsp Sunflower oil
1 Onion, halved and sliced
300 g Broccoli, cut into small florets
3 tbsp Curry paste of your choice
400 g Coconut milk (1 can)
400 g Chickpeas, drained and rinsed
Naan bread, to serve
Directions:
1. Coat halloumi cubes in cornflour.
2. Heat oil in a frying pan and fry halloumi until golden. Set aside.
3. Cook onion and broccoli for 5 mins, then add curry paste and stir for 1 min.
4. Add coconut milk and chickpeas, simmer for 10 mins.
5. Return halloumi to pan and stir. Serve with naan.
