Halloumi & Butternut Squash Orzo Bake

This Halloumi & Butternut Squash Orzo Bake is a comforting vegetarian dish that’s perfect for busy midweek evenings. The combination of squeaky halloumi, sweet butternut squash, and creamy orzo makes for a hearty, flavorful meal that everyone will love. Plus, it’s an easy hands-off recipe—pop it in the oven and relax while it does the work!

1 Red onion, cut into wedges
500g Butternut squash, cubes
3 Garlic cloves, crushed
2 tsp Olive oil
1 tsp Paprika
300g Dry orzo
700ml Vegetable stock
250g Cherry tomatoes
2 tbsp Pesto
225g Halloumi, cut into cubes
Salt & pepper

Directions:
1. Preheat oven to 200°C. Toss onion, squash, and garlic with oil, paprika, salt, and pepper. Bake 30 min.
2. Add orzo, stock, tomatoes, pesto; top with halloumi. Bake 15-25 min.
