Ground Turkey Stuffed Acorn Squash

2 acorn squash
1 tbsp avocado oil
Salt & pepper
1 tbsp unsalted butter
½ cup sweet onion, chopped
½ cup carrot, chopped
½ cup celery, chopped
½ lb ground turkey
1 tsp garlic, minced
½ tsp dried sage
½ tsp dried thyme
¼ tsp black pepper
2 tbsp Kikkoman® Soy Sauce
1 cup gruyere cheese, grated
Directions:
1. Preheat oven to 400°F. Prep squash and roast for 40 mins.
2. Sauté onion, carrot, and celery. Add turkey & seasonings.
3. Stuff squash, top with cheese, and bake for 15 mins.
