Grilled Pork Tenderloin with Pineapple Salsa

Ingredients

For the pork tenderloin:
1 pork tenderloin (about 1 lb)
3 tbsp olive oil
2 tbsp soy sauce
2 tbsp honey
2 garlic cloves, minced
1 tsp ground cumin
1 tsp smoked paprika
½ tsp black pepper
Juice of 1 lime
For the pineapple salsa:
1 ½ cups fresh pineapple, diced
1 tbsp olive oil
1 tbsp chopped fresh cilantro
Juice of ½ lime
Salt and pepper to taste
Directions

Step 1: In a small bowl, mix olive oil, soy sauce, honey, minced garlic, cumin, paprika, black pepper, and lime juice to make the marinade.
Step 2: Place the pork tenderloin in a resealable bag and pour the marinade over it. Marinate in the fridge for at least 1 hour (or up to overnight).
Step 3: Preheat the grill to medium-high heat. Grill the pork tenderloin for 15-20 minutes, turning occasionally, until it reaches an internal temperature of 145°F. Let it rest for 5 minutes before slicing.
Step 4: While the pork is resting, toss the pineapple with olive oil and grill for 2-3 minutes until slightly charred. Combine grilled pineapple with cilantro, lime juice, salt, and pepper to make the salsa.
Step 5: Serve the sliced pork tenderloin with the pineapple salsa on the side. Garnish with lime wedges if desired.

Cook Time: 20 minutes
