Grilled Pork Tenderloin with Pineapple Salsa

Ingredients

For the Pork Tenderloin:

1 lb pork tenderloin
2 tbsp olive oil
2 tbsp soy sauce
2 tbsp honey
1 tbsp lime juice
2 cloves garlic (minced)
1 tsp smoked paprika
Salt and pepper to taste
For the Pineapple Salsa:

1 cup fresh pineapple (diced)
1 tbsp olive oil
1 tbsp fresh cilantro (chopped)
Juice of 1/2 lime
Salt and pepper to taste
Directions

Marinate the pork: Combine olive oil, soy sauce, honey, lime juice, garlic, smoked paprika, salt, and pepper. Pour the marinade over the pork tenderloin, ensuring it’s fully coated. Marinate for at least 30 minutes (or overnight for best flavor).

Grill the pork: Preheat your grill to medium-high heat. Grill the pork tenderloin for 5-6 minutes per side or until the internal temperature reaches 145°F (63°C). Let it rest for 5 minutes before slicing.

Prepare the pineapple salsa: Toss diced pineapple with olive oil, lime juice, cilantro, salt, and pepper. Lightly grill or serve fresh.

Serve: Slice the pork tenderloin, plate with pineapple salsa, and garnish with lime wedges. Enjoy!
