Ingredients:
For the Chicken:
2 boneless, skinless chicken breasts
1 tbsp olive oil
Salt and pepper to taste
1 tsp garlic powder
1 tsp dried oregano
Fresh thyme or parsley for garnish
For the Pasta:
12 oz penne pasta
1 tbsp olive oil
1/2 cup grated parmesan cheese
For the Creamy Sauce:
1 cup heavy cream
1/2 cup chicken broth
2 tbsp unsalted butter
1/2 cup grated parmesan cheese
1 tsp garlic powder
Salt and pepper to taste
1/2 tsp dried basil
Instructions:
1. Prepare the Chicken:
Preheat your grill or grill pan over medium heat.
Rub the chicken breasts with olive oil, and season with salt, pepper, garlic powder, and oregano.
Grill the chicken for 6-8 minutes per side, or until fully cooked (165°F internal temperature). Let the chicken rest for 5 minutes before slicing into thin strips.
2. Cook the Pasta:
Bring a pot of salted water to a boil and cook the penne pasta according to the package instructions.
Drain and toss with olive oil and grated parmesan cheese. Set aside.
3. Make the Creamy Sauce:
In a saucepan, melt butter over medium heat.
Add the garlic powder, dried basil, salt, and pepper, and cook for 1 minute until fragrant.
Pour in the heavy cream and chicken broth, stirring to combine. Let the sauce simmer for 4-5 minutes until slightly thickened.
