Grilled Chicken Pasta
Ingredients:
2 boneless, skinless chicken breasts
300g fettuccine or pasta of your choice
2 tbsp olive oil
3 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tsp Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Instructions:
1. Prepare the Chicken:
Season the chicken breasts with salt, pepper, and Italian seasoning.
Heat a grill pan over medium heat, add 1 tbsp olive oil, and grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from heat and let it rest before slicing.
2. Cook the Pasta:
Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
3. Make the Sauce:
In a skillet, heat the remaining olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese and cook until the sauce thickens slightly. Season with salt, pepper, and more Italian seasoning if desired.
4. Combine:
Add the cooked pasta to the skillet and toss to coat with the sauce evenly.
5. Assemble:
Serve the pasta in bowls, topped with sliced grilled chicken. Garnish with chopped parsley and additional Parmesan cheese if desired.
