Grilled Chicken Alfredo Pasta
Ingredients:
2 chicken breasts, boneless and skinless
200g fettuccine pasta
2 tablespoons olive oil
1 tablespoon butter
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped
Instructions:
Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to the package directions. Drain and set aside.
Grill the Chicken: Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Heat a grill pan over medium heat and cook the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from heat and cut into bite-sized cubes.
Make the Alfredo Sauce: In the same pan, melt butter and add minced garlic. Sauté for 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and cook until the sauce thickens, about 5 minutes. Season with salt and pepper.
Combine and Serve: Add the cooked pasta to the Alfredo sauce, tossing to coat evenly. Place the grilled chicken on top of the pasta. Garnish with fresh parsley and a bit of extra Parmesan cheese.
