1 1/2 lbs fresh green beans, trimmed
1 tsp Diamond Crystal kosher salt
1/4 tsp black pepper
8 oz cremini mushrooms, sliced
1 small red onion, thinly sliced
1 1/2 tbsp unsalted butter
3/4 cup low-sodium chicken stock

Directions:
1. Spread green beans in a skillet. Season with salt and pepper.
2. Add mushrooms, onion, butter, and chicken stock.
3. Cook over medium-high heat, stirring occasionally, for 20 minutes or until green beans are tender.
