1 cup farro, cooked according to package instructions
½ cup dried cranberries
½ cup crumbled feta cheese
½ cup chopped walnuts or pecans
2 cups baby spinach, chopped
¼ cup red onion, finely diced
For the Citrus Dressing:
¼ cup freshly squeezed orange juice
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp honey or maple syrup
½ tsp Dijon mustard
Salt and black pepper to taste
Directions:
In a large bowl, combine cooked farro, dried cranberries, feta cheese, walnuts (or pecans), spinach, and red onion.
In a small bowl, whisk together orange juice, olive oil, apple cider vinegar, honey (or maple syrup), Dijon mustard, salt, and black pepper until well combined.
Pour the dressing over the salad and toss gently to coat.
Serve immediately or let it sit for 10-15 minutes to allow the flavors to blend. Enjoy!
