Greek Rigatoni Pasta Salad

Description

For the Dough:
3 cups all-purpose flour
1 packet (2 ¼ tsp) instant yeast
1 tsp salt
1 tbsp sugar
¾ cup warm milk (110°F)
2 tbsp unsalted butter, melted
1 egg
For the Filling:
2 tbsp unsalted butter, melted
3 cloves garlic, minced
1 ½ cups fresh spinach, chopped
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
½ tsp salt
¼ tsp black pepper
½ tsp red pepper flakes (optional)
Directions:
In a mixing bowl, combine flour, yeast, salt, and sugar. Add warm milk, melted butter, and egg. Mix until a dough forms. Knead for 8-10 minutes until smooth.
Cover and let rise for 1 hour or until doubled in size.
In a skillet over medium heat, sauté garlic in melted butter for 30 seconds. Add chopped spinach, cook until wilted, then remove from heat. Stir in mozzarella,
Parmesan, salt, pepper, and red pepper flakes.
Roll out the dough into a large rectangle (about 12×18 inches). Spread the spinach mixture evenly over the dough.
Cut the dough into squares, stack them, and arrange in a greased loaf pan. Cover and let rise for another 30 minutes.
Preheat oven to 350°F (175°C). Bake for 30-35 minutes until golden brown.
Let cool slightly before pulling apart and enjoying warm!
