Greek Rigatoni Pasta Salad

Description

8 oz pasta (penne, rigatoni, or rotini)
1 lb ground turkey
1 small onion, diced
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 can (15 oz) tomato sauce
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon red pepper flakes (optional)
1 tablespoon olive oil
Directions:
Preheat your oven to 375°F (190°C). Lightly grease a baking dish and set aside.
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet over medium heat, heat the olive oil and sauté the diced onion until softened. Add the garlic and cook for another minute.
Add the ground turkey to the skillet and cook until browned, breaking it apart as it cooks.
Stir in the diced tomatoes, tomato sauce, Italian seasoning, salt, black pepper, and red pepper flakes (if using). Let the sauce simmer for 5 minutes.
Combine the cooked pasta with the turkey sauce and mix well. Transfer to the prepared baking dish.
Sprinkle mozzarella and Parmesan cheese evenly over the top.
Bake uncovered for 20 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool for a few minutes before serving.
