For the Meatballs
1 lb ground chicken
1/2 cup ricotta cheese
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
2 cloves garlic, minced
1 teaspoon lemon zest
1 tablespoon lemon juice
1 teaspoon dried oregano
Salt and pepper, to taste
2 tablespoons olive oil (for cooking)
For the Bok Choy & Garlic Orzo
12 oz orzo pasta
2 tablespoons olive oil
4 cups bok choy, chopped
2 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1 tablespoon fresh parsley, chopped
Salt and pepper, to taste
Directions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a bowl, combine ground chicken, ricotta cheese, breadcrumbs, Parmesan, egg, garlic, lemon zest, lemon juice, oregano, salt, and pepper. Mix until well
combined.
Form the mixture into 1-inch meatballs and place them on the baking sheet. Drizzle with olive oil.
Bake for 20–25 minutes, or until the meatballs are cooked through and golden brown.
While the meatballs bake, cook orzo according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic and bok choy, sautéing for 3–4 minutes until tender.
Add cooked orzo to the skillet, along with red pepper flakes (if using), heavy cream, and Parmesan cheese. Stir to combine, and cook for another 2–3 minutes
until creamy.
Season with salt and pepper to taste.
Serve the creamy orzo and bok choy mixture with the lemon chicken ricotta meatballs on top. Garnish with fresh parsley.
