Greek Chicken Pasta Salad

Description

For the Meatballs:
1 lb ground chicken
1/2 cup breadcrumbs
1 egg
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
For the Sauce:
1/2 cup cranberry sauce
3 tablespoons honey
2 tablespoons soy sauce
1 tablespoon apple cider vinegar
2 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
Directions:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine the ground chicken, breadcrumbs, egg, garlic, salt, black pepper, onion powder, and thyme. Mix until well combined.
Roll the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
Bake for 18-20 minutes, or until fully cooked and golden brown.
While the meatballs are baking, prepare the sauce. In a saucepan over medium heat, combine cranberry sauce, honey, soy sauce, apple cider vinegar, garlic, and
red pepper flakes (if using). Stir and cook until smooth and heated through, about 5 minutes.
Once the meatballs are done, transfer them to the saucepan and toss to coat in the sauce.
Serve warm, garnished with fresh herbs if desired.
