Golden-Brown Garlic Mushrooms and Roasted Cauliflower
Ingredients

For the Vegetables:

1 medium head of cauliflower, cut into florets
2 cups mushrooms (button or cremini), cleaned and halved
1 medium onion, diced
For the Marinade:

3 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon thyme (dried or fresh)
Salt and pepper, to taste
For Garnish:

2 tablespoons fresh parsley, chopped
Instructions

Preheat and Prep:

Preheat your oven to 425°F (220°C).
Line a baking sheet with parchment paper or lightly grease it.
Marinate Vegetables:

In a large bowl, mix olive oil, garlic, smoked paprika, thyme, salt, and pepper.
Toss the cauliflower florets, mushrooms, and diced onion in the marinade until evenly coated.
Roast:

Spread the vegetables evenly on the prepared baking sheet.
Roast for 20-25 minutes, flipping halfway through, until the cauliflower is golden brown and tender and the mushrooms are caramelized.
Serve:

Transfer to a serving dish and garnish with fresh parsley.
