Goat Cheese & Dried Cherries Lentil Salad with Orange Vinaigrette

Description

3 large russet potatoes, cut into wedges
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp salt
1/2 tsp black pepper
1/3 cup grated Parmesan cheese
1 tbsp fresh parsley, chopped
For Serving (Optional):
Extra Parmesan cheese
Ranch dressing or garlic aioli
Directions:
Preheat the air fryer to 400°F (200°C).
In a large bowl, toss the potato wedges with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly coated.
Arrange the wedges in a single layer in the air fryer basket (cook in batches if necessary).
Air fry for 15-18 minutes, shaking the basket halfway through, until golden brown and crispy.
Transfer to a bowl and toss with grated Parmesan and fresh parsley.
Serve hot with extra Parmesan and your favorite dipping sauce. Enjoy!
