Description
For the Chicken:
2 boneless, skinless chicken breasts
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
Salt and black pepper to taste
For the Orzo:
1 cup orzo pasta
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1 tbsp butter
1 tbsp fresh lemon juice
1 tsp lemon zest
1 garlic clove, minced
Salt and black pepper to taste
Fresh parsley for garnish
Directions:
Preheat grill or grill pan over medium-high heat. Season chicken breasts with olive oil, garlic powder, oregano, salt, and black pepper.
Grill chicken for 5-7 minutes per side, until cooked through. Let rest for a few minutes before slicing.
While the chicken is grilling, cook orzo according to package instructions. Drain and set aside.
In a large skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute, until fragrant.
Stir in the heavy cream, Parmesan cheese, lemon juice, and lemon zest. Bring to a simmer and cook for 2-3 minutes until creamy.
Add cooked orzo to the skillet and toss to coat in the creamy sauce. Season with salt and black pepper to taste.
Serve the creamy lemon Parmesan orzo with sliced grilled chicken on top. Garnish with fresh parsley. Enjoy!
