1 cup cottage cheese
2 large eggs
¼ cup honey or maple syrup
1 tsp vanilla extract
½ cup almond flour
½ tsp baking powder
½ tsp cinnamon
1 cup fresh blueberries
¼ cup chopped nuts (optional, for topping)
Directions:
Preheat Oven: Set your oven to 350°F (175°C) and grease a small baking dish.
Mix Wet In a bowl, whisk together the cottage cheese, eggs, honey (or maple syrup), and vanilla extract until well combined.
Add Dry Stir in the almond flour, baking powder, and cinnamon, mixing until smooth.
Fold in Blueberries: Gently fold in the blueberries, reserving a few for topping.
Bake: Pour the mixture into the prepared baking dish, sprinkle with additional blueberries and nuts if using, and bake for 25-30 minutes, or until golden and
set.
Cool & Serve: Let it cool for a few minutes before slicing. Enjoy warm or chilled!
