1/4 cup Greek yogurt or mayonnaise
1 tablespoon fresh lime juice
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup red onion, finely chopped
1/4 cup celery, finely chopped
1/4 cup cherry tomatoes, diced
1 tablespoon fresh cilantro or parsley, chopped
8 large butter lettuce leaves
Directions:
In a large mixing bowl, mash the avocado until smooth. Stir in the Greek yogurt (or mayonnaise), lime juice, garlic powder, salt, and black pepper until well
combined.
Add the shredded chicken, red onion, celery, cherry tomatoes, and cilantro. Mix until all are evenly coated.
Spoon the avocado chicken salad into the center of each lettuce leaf.
