Ginger Garlic Bok Choy Stir-Fry with Sesame Oil

Description

1 sheet puff pastry, thawed
½ cup ricotta cheese
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 cup fresh spinach, chopped
1 egg, beaten (for egg wash)
½ tsp garlic powder
½ tsp dried oregano
Salt and black pepper to taste
Directions:
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a bowl, mix ricotta cheese, mozzarella, Parmesan, spinach, garlic powder, oregano, salt, and black pepper until well combined.
Roll out the puff pastry and cut it into 12 squares.
Place a spoonful of the cheese mixture in the center of each square.
Fold the edges over slightly or pinch into little pockets, sealing them lightly.
Brush the tops with the beaten egg for a golden finish.
Bake for 15-18 minutes or until the pastry is golden brown and puffed.
Let cool slightly before serving. Enjoy warm!
