For the Flatbread:
1 pre-made flatbread or pizza dough
1 tbsp olive oil
1 cup shredded aged cheddar cheese
For the Caramelized Onions:
1 large onion, thinly sliced
1 tbsp butter
1 tsp balsamic vinegar
1/2 tsp salt
1/4 tsp black pepper
For the Cranberry Topping:
1/4 cup dried cranberries
1 tbsp honey or maple syrup
1 tbsp water
Directions:
Preheat oven to 400°F (200°C).
In a skillet, melt butter over medium-low heat. Add sliced onions, salt, and black pepper. Cook, stirring occasionally, for 15-20 minutes until deeply
caramelized. Stir in balsamic vinegar and cook for another 2 minutes.
In a small saucepan, combine cranberries, honey (or maple syrup), and water. Simmer for 3-4 minutes until softened. Remove from heat.
Brush the flatbread with olive oil and sprinkle with shredded cheddar. Evenly distribute the caramelized onions and cranberry topping over the flatbread.
Bake for 10-12 minutes until the cheese is melted and bubbly.
Slice and serve warm. Enjoy!
