Garlic Mushroom Rice

Ingredients

2 tbsp butter or olive oil
3 cloves garlic, minced
1 cup mushrooms, sliced
1 cup basmati or jasmine rice
2 cups vegetable or chicken broth
1/2 tsp turmeric (optional, for color)
1/4 tsp black pepper
Salt to taste
1/4 cup fresh parsley, chopped (for garnish)
Directions

Sauté the mushrooms: Heat butter or olive oil in a large pan over medium heat. Add garlic and sauté until fragrant (about 1 minute). Add mushrooms, sprinkle with salt and pepper, and cook until golden and tender (about 5 minutes). Remove half of the mushrooms and set aside for garnish.

Toast the rice: Add rice to the pan with the remaining mushrooms. Stir and toast for 1-2 minutes to enhance the flavor.

Cook the rice: Pour in the broth, add turmeric (if using), and bring to a boil. Lower the heat to a simmer, cover, and cook for 15-18 minutes, or until the rice is tender and the liquid is absorbed.

Fluff and garnish: Fluff the rice with a fork, mix in chopped parsley, and top with the reserved mushrooms.

Serve: Serve hot as a side dish or a light main meal.
