Garlic Herb Steak Bites with Potatoes
Ingredients:
500g beef sirloin or tenderloin, cut into bite-sized pieces
500g baby potatoes, halved
3 tablespoons olive oil, divided
3 garlic cloves, minced
1 teaspoon dried rosemary
1 teaspoon dried thyme
Salt and black pepper to taste
2 tablespoons unsalted butter
Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the Potatoes: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the halved baby potatoes, cut side down, and season with salt, black pepper, rosemary, and thyme. Cook for 10-12 minutes, stirring occasionally, until golden brown and tender. Remove from the skillet and set aside.
2. Cook the Steak Bites: In the same skillet, heat the remaining 1 tablespoon of olive oil over high heat. Add the steak bites and season with salt and black pepper. Cook for 2-3 minutes per side until browned and cooked to your desired doneness. Remove from the skillet and set aside.
3. Prepare the Garlic Butter: Lower the heat to medium and add the butter to the skillet. Once melted, stir in the minced garlic and cook for 1 minute until fragrant.
4. Combine: Return the cooked potatoes and steak bites to the skillet, tossing them in the garlic butter until well coated and heated through.
5. Serve: Garnish with chopped parsley and serve immediately.
