Garlic Herb Sausages with Roasted Broccoli
Ingredients
4 sausages (pork, chicken, or plant-based)
3 cups broccoli florets
2 tbsp olive oil
2 cloves garlic, minced
1 tsp Italian herbs (or dried parsley)
Salt & pepper to taste
Optional garnish: Fresh parsley, lemon wedges
Directions
Prepare the broccoli:
Preheat oven to 400°F (200°C).
Toss broccoli with olive oil, minced garlic, Italian herbs, salt, and pepper. Spread on a baking sheet.
Roast the broccoli:
Roast in the oven for 20-25 minutes, flipping halfway through, until tender and slightly charred.
Cook the sausages:
Heat a skillet over medium heat. Add the sausages and cook, turning occasionally, until browned and cooked through (internal temperature of 160°F or 71°C). This should take about 10-12 minutes.
Plate & serve:
Serve the sausages alongside the roasted broccoli. Garnish with fresh parsley and a squeeze of lemon for extra flavor.
