Description
1 cup orzo pasta
2 tbsp butter
3 cloves garlic, minced
2 cups chicken or vegetable broth
½ cup heavy cream
½ cup grated Parmesan cheese
½ tsp salt
¼ tsp black pepper
½ tsp Italian seasoning
½ cup spinach, chopped (optional)
2 tbsp fresh parsley, chopped (for garnish)
Directions:
In a large pan over medium heat, melt butter and sauté garlic for about 30 seconds until fragrant.
Add orzo and toast for 1-2 minutes, stirring frequently.
Pour in the broth and bring to a simmer. Cook, stirring occasionally, until the liquid is mostly absorbed and the orzo is tender (about 10 minutes).
Reduce heat to low and stir in heavy cream, Parmesan cheese, salt, black pepper, and Italian seasoning.
If using spinach, stir it in and cook for another minute until wilted.
Remove from heat and garnish with fresh parsley. Serve warm and enjoy!
