Garlic Butter Shrimp Scampi Pasta

Ingredients
:
For the Pasta:

250g Spaghetti or Linguine

Salt (for boiling water)

For the Shrimp Scampi:

2 tbsp Olive Oil

3 tbsp Butter

4 Garlic Cloves (minced)

300g Shrimp (peeled and deveined)

1/4 cup Dry White Wine
(optional)
1/4 cup Lemon Juice

1/4 tsp Red Pepper Flakes
(optional)
Salt and Pepper (to taste)

1/4 cup Fresh Parsley (chopped)

1/4 cup Parmesan Cheese (grated)

Instructions
:
Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the spaghetti or linguine until al dente according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.

Sauté the Shrimp:
In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat. Add minced garlic and cook until fragrant (about 1 minute). Add shrimp and cook for 2-3 minutes on each side, or until pink and opaque. Remove shrimp and set aside.

Make the Sauce:
In the same skillet, add the white wine (if using) and let it simmer for 1-2 minutes to reduce slightly. Stir in lemon juice, red pepper flakes (optional), salt, and pepper. Add the remaining butter and reserved pasta water, stirring until the sauce is smooth.

Combine Everything:
Return the cooked shrimp to the skillet, then toss in the cooked pasta. Mix well to coat the pasta and shrimp in the garlic butter sauce. Adjust seasoning if needed.

Serve:
Plate the shrimp scampi pasta and sprinkle with fresh parsley and grated Parmesan cheese. Serve warm and enjoy!
