Ingredients
For the Garlic Butter Shrimp:
1/2 lb large shrimp, peeled & deveined
1 tbsp butter
2 cloves garlic, minced
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp red pepper flakes (optional)
For the Grilled Cheese:
4 slices sourdough or thick-cut bread
2 tbsp butter, softened
4 slices mozzarella or provolone cheese
2 slices cheddar cheese
1 tbsp fresh parsley, chopped
Instructions
Prepare the Garlic Butter Shrimp
In a skillet, melt butter over medium heat.
Add minced garlic and sauté for 30 seconds.
Toss in shrimp, paprika, salt, black pepper, and red pepper flakes.
Cook for 2-3 minutes per side until shrimp is pink and opaque. Remove from heat.
Assemble the Sandwich
Butter one side of each bread slice.
Place a slice of mozzarella and cheddar on the unbuttered side.
Layer the garlic butter shrimp evenly, then top with another slice of mozzarella or provolone.
Place the second slice of bread on top, buttered side facing out.
Grill the Sandwich
Heat a skillet or griddle over medium-low heat.
Cook each sandwich for 3-4 minutes per side until golden brown and cheese is melted.
Serve & Enjoy
Garnish with fresh parsley and serve hot!
