Garlic Butter Salmon with Crispy Potatoes
Ingredients
1 salmon fillet (about 1.5 lbs)
1 lb baby potatoes, halved
3 tbsp unsalted butter, melted
3 garlic cloves, minced
1/2 cup panko breadcrumbs
2 tbsp olive oil
1 tsp paprika
Salt and pepper, to taste
1/4 cup fresh parsley, chopped
1 lemon, sliced
Directions
Preheat the oven to 400°F (200°C).
Toss the halved potatoes with olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 15 minutes.
Meanwhile, combine melted butter, minced garlic, and breadcrumbs.
Place the salmon fillet on the baking sheet alongside the potatoes. Brush with garlic butter and top with lemon slices.
Roast for another 12-15 minutes, or until the salmon is flaky and the potatoes are crispy.
Garnish with fresh parsley and serve warm.
