Garlic Butter Ravioli with Spinach & Mushrooms

Ingredients

1 package (10 oz) cheese or spinach ravioli
2 tbsp unsalted butter
1 tbsp olive oil
3 garlic cloves, minced
1 cup mushrooms, sliced
2 cups fresh spinach
1/4 cup sun-dried tomatoes, chopped
1/2 cup vegetable or chicken broth
1/2 tsp red pepper flakes (optional)
Salt and pepper to taste
Directions

Cook the Ravioli: Boil ravioli according to package instructions. Drain and set aside.

Sauté the Mushrooms: In a large skillet, heat olive oil and butter over medium heat. Add garlic and mushrooms, sautéing until mushrooms are golden brown.

Add Spinach & Sun-Dried Tomatoes: Stir in fresh spinach and sun-dried tomatoes, cooking until the spinach wilts.

Make the Sauce: Pour in broth and add red pepper flakes, stirring until the sauce thickens slightly. Season with salt and pepper.

Toss the Ravioli: Add cooked ravioli to the skillet, gently tossing to coat in the garlic butter sauce.
