For the Salad:
12 oz cheese tortellini, cooked and cooled
1/2 cup cherry tomatoes, halved
1/3 cup Kalamata olives, sliced
1/3 cup crumbled feta cheese
1/4 cup red onion, thinly sliced
1/4 cup cucumber, diced
2 tbsp capers
1/4 cup fresh parsley, chopped
For the Lemon Herb Dressing:
3 tbsp olive oil
2 tbsp fresh lemon juice
1 tsp lemon zest
1 tsp Dijon mustard
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper
1 garlic clove, minced
Directions:
Prepare the Dressing: In a small bowl, whisk together olive oil, lemon juice, lemon zest, Dijon mustard, oregano, basil, salt, black pepper, and minced garlic.
Set aside.
Assemble the Salad: In a large bowl, combine cooked tortellini, cherry tomatoes, olives, feta cheese, red onion, cucumber, capers, and parsley.
Dress & Toss: Drizzle the lemon herb dressing over the salad and toss gently to coat all evenly.
Chill & Serve: Let the salad sit for 15 minutes to allow the flavors to meld, then serve chilled or at room temperature.
