Fresh Green Bean Salad Recipe

Ingredients:

1 lb fresh green beans, trimmed
1 cup cherry tomatoes, halved
¼ cup red onion, thinly sliced
½ cup feta cheese, crumbled
¼ cup almonds, toasted or raw
2 tbsp olive oil
1 tbsp lemon juice (or balsamic vinegar)
1 tsp Dijon mustard (optional)
Salt and pepper to taste
Instructions:

Blanch the Green Beans:

Bring a pot of salted water to a boil.
Add green beans and cook for 2-3 minutes until tender-crisp.
Transfer to a bowl of ice water to stop cooking. Drain and pat dry.
Prepare the Dressing:

In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
Assemble the Salad:

In a large bowl, combine green beans, cherry tomatoes, and red onions.
Drizzle the dressing over the salad and toss gently.
Add Toppings:

Sprinkle with feta cheese and almonds.
Serve:

Chill for 15 minutes or serve immediately.
