French Onion Meatloaf
Ingredients
2 lbs ground beef
1 cup breadcrumbs
2 large eggs
1 packet onion soup mix
1/2 cup milk
2 cups shredded mozzarella cheese
1 large onion (thinly sliced)
2 tbsp butter
1 tbsp olive oil
2 cups beef broth
2 tbsp flour
Fresh parsley (for garnish)
Directions
Make the Meatloaf:
Preheat the oven to 375°F (190°C). In a bowl, mix ground beef, breadcrumbs, eggs, onion soup mix, and milk. Shape into a loaf and place in a baking dish.
Cook the Onions:
In a skillet, heat butter and olive oil. Sauté onions on medium heat until caramelized, about 10 minutes. Set aside.
Bake the Meatloaf:
Top the meatloaf with half the caramelized onions. Bake for 45-50 minutes or until cooked through.
Prepare the Gravy:
In the same skillet, sprinkle flour over remaining onions. Stir and cook for 1 minute. Slowly whisk in beef broth and simmer until thickened.
Assemble and Serve:
Remove the meatloaf from the oven. Top with mozzarella cheese and pour onion gravy over it. Garnish with fresh parsley and serve hot!
