Fluffy Strawberry Mousse
Ingredients:
8 oz cream cheese or coconut cream
4 oz yogurt or additional cream cheese/coconut cream
1 cup powdered sugar or sugar-free alternative
5 medium-sized strawberries
Optional: 1/4 tsp vanilla bean paste
Instructions:
If using cream cheese, allow it to reach room temperature. If using coconut cream, check that the contents are thick and creamy (avoid cans that are hard and flakey).
Remove the stems from the strawberries and mash or blend until they form a smooth purée.
In a blender, food processor, or with a hand mixer, combine the puréed strawberries with the cream cheese or coconut cream, yogurt, powdered sugar, and optional vanilla bean paste. Blend until completely smooth.
Transfer the mixture into serving dishes.
Refrigerate the mousse to allow it to thicken as it chills, at least for 1-2 hours.
