Fluffy Jam Doughnut Pancakes
Ingredients

For the Pancake Batter:

1 ½ cups (190g) all-purpose flour
3 tbsp granulated sugar
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 cup (240ml) buttermilk (or whole milk with 1 tbsp lemon juice)
1 large egg
2 tbsp unsalted butter, melted
1 tsp vanilla extract
For the Filling & Topping:

Your favorite fruit jam or jelly (e.g., raspberry, strawberry)
Powdered sugar, for dusting
Instructions

Prepare the Batter:

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and gently fold until just combined (some lumps are okay). Avoid overmixing.
Heat the Pan:

Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
Cook the Pancakes:

Scoop 2 tablespoons of batter onto the skillet for each pancake.
Add a teaspoon of jam to the center of the batter, then cover the jam with another tablespoon of batter.
Cook for 2–3 minutes, or until bubbles form on the surface and the edges look set.
Carefully flip the pancake and cook for an additional 2–3 minutes, until golden brown and cooked through.
Serve:

Dust the warm pancakes with powdered sugar and serve with extra jam on the side.
Prep Time: 10 minutes
Cook Time: 20 minutes
Servings: 4 (makes about 12 pancakes)
